Cherry Franzipan

This makes enough for 6 average sized portions, 4 large.

1 Quick mix pastry

150g (6oz) plain flour
75g (3oz) soft margarine
25g (1oz) castor sugar
1 egg
Mix the ingredients together and knead into a stiff dough
Roll out the pastry, form it around the inside of a flan dish and chill in the fridge for 30 mins
Heat the oven to Gas mark 6 (200C or 180C if fan assisted)

2 Filling

100g (4oz) margarine
100g (4oz) castor sugar
1 egg
75g (3oz) semolina
50g (2oz) glacé cherries
75g (3oz) raisins
100g (4oz) marzipan
Place the margarine, castor sugar, egg and semolina in a bowl and beat until smooth and creamy.
Cut the cherries into quarters and add to the mixture. Add the raisins.
Chop the marzipan and fold into the mixture until evenly distributed.
Spread the mixture in the pastry case.
Bake in the centre of the oven for 20 mins at gas mark 6 (200C or 180C for fan oven) then reduce the temperature to gas mark 4 (180C or 16oC for fan oven) for a further 20-25 minutes
Remove from the oven and sprinkle with icing sugar before serving.
